4-COURSE TRUFFLE DINNER WITH WINE PAIRINGS Hi! I'm Jean-Yves, I'm the winner of the 2012-edition of Masterchef France. Since then, I have traveled the world to train with the best chefs and have brought back the best flavors to my cuisine. I invite you to my place that used to be wine cellar to taste a special Truffle 4-course menu with champagne and wine pairings. This menu will be a unique and rare combination of a classic ingredient of Western cuisine and Asian flavors. Appetizer, truffle flavor Cocktail with champagne, molecular process Bite sized of salmon marinated in homemade truffle oil , muslin of avocadowith roasted sesame Starter Gambas of the Mekong river flambé in sake, reduction of litchi juice, « julienne » of green papaya with fresh truffle Main Course Rossini ostrich with toasted foie gras, baked potato with truffle Dessert Macaron homemade by the Chef Local saké (home made) Vietnamese coffee Wine & Drinks Paring wine included (White wine Saumur 2017 cépage Chenin Blanc and Red Wine Haut-Médoc Victoria II 2012)

    Five stars all around! My second time at Jean’s gorgeous wine cellar table, can’t wait to do it a third time. The food is so consistent yet intricate & flavorful. The molecular gastronomy part of the meal is really just the most impressive icing on a very complex & lovely cake. 5

    I had a wonderfull evening in Paris with Jean Yves! The food was amazing and the combination of flavours was absolutely incredible . I love the idea to meet people from different countries. I strongly recommend this event. It’s better than 3 star restaurant. 5

Born in Vietnam and raised in France, Chef Jean Yves has become an expert in the art of fusing culinary techniques and traditions after winning of the 2012 edition of Masterchef France. After two decades of working as an interior designer for a prestigious group; Jean-Yves has taken the bold move to leave his comfort zone and dedicate his time and his life to his two passions: gastronomy and the art of receiving guests. He is known as much for his unbelievable creations as for the grace with which he serves them — teaching you how and why certain flavors work together, challenging your palate, and telling the story of every dish. One of his projects is to create his own team gathering a handful of talented chefs from all over the world.
